Cooking Classes FALL & HOLIDAY COOKING CLASSES WITH CHEF CHELSEA Artisanal Preserves Tuesday, September 28, 6:30 pm, $35 per person. Demonstrations and tastings of pear-ginger jam, roasted tomato garlic salsa, ketchup, BBQ sauce, tomato sauce, and pickled roasted red peppers with garlic. Each student will take home a jar of artisanal preserve. Pizza and Wine Friday, October 1, 6:30 0m, $35 per person. Demonstration of the preparation of pizza dough followed by the preparation of your own pizza with toppings. Students will get to sample their work accompanied by two glasses of wine. Learn about the story of pizza, its origins, and the importance of various flours. Sushi "Rock & Roll" Wednesday, October 5, 6:30 p.m., $35 per person. Come and learn how to prepare sushi rice, small rolls, large rolls, and in-side out rolls. Spicy tuna roll, Philadelphia roll, and California roll will be the specialties of the night. At the end of class sample your work paired with some of our local wines! Fall Soups Thursday, October 13, 6:30 pm, $25 per person. Learn how to use the great harvest flavors as building blocks to a great soup. In this demonstration class learn how to make a 10-minute Tortilla soup, butternut squash soup, cream of carrot, hearty leek potato chard soup, and a root vegetable barley soup with bacon. All soups will be sampled by the students! Fall Salads Friday, October 14, 6:30 pm $25 per person. Explore the variety of fall flavors in salads using ingredients such as farro, wild rice, barley, autumn vegetables, dried fruits, nuts, and cheese. This class will be hands on and students will enjoy the evenings work in a buffet style. Harvest Evening Tea Party Wednesday, October 19, 6:30 pm, $40 per person. Enjoy an evening sipping on a variety of fall styled teas such as chai, Darjeeling, and crème Brule, a flavored black tea. Learn how to make tea sandwiches, savory tarts, and scones. This class will be hands on, demonstrations, and students will enjoy their work at the end of class. Newcastle Produce Harvest-to-Table Dinner & Demo Saturday, October 22, 6:30 pm $45 per person. Local wine paired with five courses: Endive pear salad bites with a warm bacon vinaigrette, French onion soup, roasted chicken, puff pastry wrapped brie with crackers and chutney, and pumpkin crème Brule. Fall Artisanal Preserves Wednesday, October 26, 6:30 pm, $35 per person. Demonstrations and tastings of pear-cardamom butter, bloody Mary base, quince jelly, apple onion chutney, flavored honey, savory butters, and infused spirits. Each student will take home a jar of pear-cardamom butter. Spooktacular Cupcakes Saturday, October 29, 6:30 pm, $35 per person. Come and decorate a dozen cupcakes with spider webs, bats, ghost, and pumpkins. You will learn how to work with buttercream and fondant. A small supply list will be given at the time of sign up. Herbs…Spice…Everything Nice Friday, November 4, 6:30 pm, $25 per person. Learn how to use a mortar and pestle, different spices, and herbs, and cooking with them. Make and take home your own seasoning and rubs. Holiday Appetizers Wednesday, November 9, 6:30 pm, $35 per person. Get your holiday party started with this hand-on class. Learn to create new appetizers that look great and keep you entertaining your guests with less time in the kitchen. Holiday Pie/Tart Workshop Saturday, November 12, 6:30 pm, $35 per person. Come and bake for an evening and take a homemade pie home. Learn the basics of pie and tart dough and seasonal fillings. Hands-on class with demos. Vine and Dine Throughout the Holidays Wednesday, November 16, 6:30 pm, $35 per person. Learn to make fabulous hors d'oeuvres, and learn cooking with wine, aromatics and pairing fundamentals. This is a hands-on and demo class. Healthy Holiday Sides Friday, November 18, 6:30 pm, $25 per person. In this class you will get recipes, demonstrations, wine and ample tastes of everything made. Learn how to make healthy side dishes that compliment the turkey, use seasonal ingredients, and maximize flavor with minimal fat and calories. Asian Dumplings Wednesday, November 30, 6:30 pm, $40 per person. Come to this hands on class where students participate in assembling and cooking dumplings. Learn to make a variety of sauces using several different of cooking methods. Take home a variety of your own prepared dumplings. Baking Holiday Cookies Friday, December 2, 6:30 pm, $35 per person. Learn how to make peppermint meringues, mandolines, coconut macaroons, and Mexican wedding cookies. Decorate a dozen sugar cookies to take home. Christmas Cookie Bouquet Wednesday, December 7, 6:30 pm, $35 per person. This is a hands on cookie decorating class. Plan your own design and theme. Decorate with royal icing, assemble and decorate your edible bouquet. (Small supply list required). Gingerbread House Class Offered twice, Saturday, December 10, and Saturday, December 17, 6:30 pm, $25 per house. It`s that time of year again! Come decorate your own gingerbread house and enjoy a cup of hot chocolate while you decorate. All you need to do is bring two bags of candy per person to share and your ideas! All You Can Roll TAMALES Wednesday, December 14, 6:30 pm, $35 per person. Roll as many as you can and take home for your own holiday fiesta. Learn how to make masa, fillings, wrapping, and steaming. If this class becomes full, the next date offered is Dec. 16. home
