Cooking Classes



WINTER COOKING CLASSES WITH CHEF CHELSEA

Taught by chef, pastry artist, and graduate from The Culinary Institute of America at Greystone in Saint Helena, California, Chelsea Federwitz. Pictures of previous classes and more info are on her artful blog www.flour-girl.blogspot.com.

All evenings include recipes, training, shopping for ingredients, and menu planning. Please plan to arrive on time. Private cooking classes are available. Please make reservations two weeks ahead of time and with a minimum of 6 students.

You can sign up for classes at Newcastle Produce (916) 663-2016 or online at www.flour-girl.blogspot.com Class fees are non-refundable. If you are unable to attend a class, please let us know one week ahead and we can transfer you into another class. Classes may be canceled if there is insufficient enrollment. If this happens, we will contact you by phone one day before the class is scheduled. You will have the choice of transferring to another class or receiving a full refund.

Pasta! Ravioli & Tortellini February 2, 6:30 p.m., $35.00 per person.
Learn how to make handmade fresh pasta dough. With the fresh pasta sheets we will be making raviolis and tortellini with a creamy garlic mushroom filling and chicken ricotta meyer lemon filling. While you are handcrafting your pasta we will have samples of them and enjoy some local wines. You will also take with you a homemade sauce to enjoy with your handmade pastas!

Just Roll It! Sushi! February 3, 6:30 p.m., $40.00 per person.
Come and learn how to prepare sushi rice, make great sauces and impress your friends. Spicy tuna roll, Philadelphia roll, and California roll will be the specialties of the night. At the end of class, sample your work paired with some of our local wines!

Plated Sushi Roll February 16, 6:30 p.m., $50.00 per person.
This class is more advanced, taking your sushi rolls to the next level. All rolls will be made inside-out, Salmon avocado, California, and a Rainbow roll. By the end of class you will have a beautiful plated presentation of your sushi.

Smoking Beef Basics February 20, 6:30 p.m., $35.00 per person.
Do you want to create the perfect beef ribs or brisket? Come learn all the tricks to smoking beef: brines, rubs, proper cooking temperatures and wood pairing to create the best beef ever. Several different smoked beef items will be available for tasting. Upon completion of this course you will walk away with a rub you assemble to try at home. All smoking will be done on Landmann 3695BGD Propane smokers. This smoker will be available for sale the night of the class.

Scones! February 21, 6:30 p.m., $35.00 per person. Enjoy an evening sipping flavorful fall teas while making scones. We will use fruits that are in season and learn about many flavor combinations such as maple pecan, pumpkin spice, and cinnamon toast! This class is hands on with demonstrations. Students will take home two dozen scones baked at class or to bake later at home.

Artisanal Preserves February 24, 6:30 p.m., $35.00 per person.
Demonstrations and tastings of Orange marmalade, spiced apple sauce, Meyer lemon curd, and cardamom pear butter. Each student will take home a jar of artisanal preserves.

Asian Flare February 29, 6:30 p.m., $35.00 per person.
In this demonstration class we will be making Chicken coconut soup with lemongrass and ginger, Asian rolls with fresh vegetables and a dipping sauce, and marinated prawns over a bed of Asian slaw. Come hungry!
